Born in Mito, Ibaraki Prefecture, Tatsumi-san learned his trade as a chef in Tokyo, then gained worldly experience in Whistler, Canada and numerous other resorts. He currently operates the Hanadai Restaurant and Ground Pub Niseko in Kutchan town.
